Chocolate decadence- Chocolate cake with a chocolate moose frosting, decorated with chocolate curls and melted chocolate. Even though this cake sound like an overload of chocolate, the mouse itself is quite light and creamy, complimenting the rich German chocolate cake underneath.

'Hawkeye Celebration'. This is a fun Iowa themed graduation cake. I made the Tiger Hawk out of fondant and the cake it self is a white chocolate frosting. I didn't have a cutter so I drew the image on waxed paper, placed it on top of the fondant and cut it out with a fine craft knife.
This boutique was created for a chic wedding. The rose was made of gum paste and the cake decorated with apple green and tiffany blue ribbon. The cake itself was German chocolate bliss with chocolate ganache frosting, satisfying those cocoa fanatics. The polk-a-dolts on the middle tier added a little girlie touch.
My first attempt at the tree trunk was to pipe icing down the side. As you know perfection is a kick in the butt for an idealist and it just didn't look right. So instead I used pieces of creme filled chocolate Pirouette that resembled the bark of a tree and placed it on the frosting. I used beads to cascade around the bottom and faux flowers in the top of the cake. I then sprinkled green sugar on the bottom of the cake as moss.
I make all my cakes from scratch. Flavors that are most populare are: vanilla, chocolate, and red velvet. I use jam between the layers and do custom decorating. I frost with butter cream and fondant. All decoration are edible.
Hi, My name is Emma Casper, originally a valleys girl from Wales now an Iowa Hawkeye lass too. I have wondered through life and staggered on the path of the arts. My main passion is Theater and acting. I dabbled in a few acting parts here and there but found it hard to make it BIG TIME, I think that's why i latched on to creating cakes. I feel as if I can express a story and meaning in each one. Thanks to my wonderful hubby Lucas who is very supportive and my FAB mother in law who is also my protege. I am still learning the correct techniques and even though there may be blunders I strive harder and learn from them.

Humidity is gum pastes enemy- It took me a lot longer to dry my figurines and flowers for a June event in Iowa with 80 degree weather.
Solution: I plan to pre-make all my figurines and flowers a few months in advance and store them. Therefore stressing out about small blunders will not be an issue!.......I hope :)
